Seasoned to Perfection: Flavoring School Menus with Scratch-Made Flair 

On April 3, 2026, the Hadley Public School foodservice team stepped out of their traditional kitchen routine and into the “Seasoned to Perfection: Homemade Spice Blends, Dressing & Sauces” workshop. Led by Chef Instructor Patty Gardner, this two-hour, hands-on culinary training was designed to prove that taking on small steps for simple scratch recipes can create a big impact on school menus!  

The Art of Building Flavor

The training focused on the power of scratch cooking, specifically targeting dressings and sauces to create signature dishes. A primary goal was to enhance depth and taste without relying on sodium or added sugar. Participants explored how to use simple ingredients—such as canned or frozen fruit, fresh herbs, and aromatic spices—to create vibrant, kid-friendly recipes to take their school menus to the next level.

Mastering the Spice Rack 

Chef Patty began with a deep dive into the fundamentals of seasoning. The team explored:

  • Herbs vs. Spices: Understanding the distinct roles of each. 
  • Fresh vs. Dried: Learning when to swap one for the other and the optimal timing for adding them during the cooking process to maximize impact. 
  • The Power of Blends: How to create house-made mixes, such as a signature taco seasoning, using staples already found in their pantries.

A Dynamic Tasting

The workshop wrapped up with a tasting and brainstorming session. The team discussed the logistics of high-volume production, noting how easily these “restaurant-quality” elements could be scaled for a school lunch rush.

The consensus was clear: even when a full meal isn’t made from scratch, adding a housemade sauce or dressing elevates the entire dish. By mastering the balance of acidity and sweetness from fruits and the depth of custom spice blends, the Hadley school nutrition team returned to their kitchens with the confidence and tools to boost their offerings.

This move toward vibrant, scratch-made elements ensures the district continues to meet its nutrition standards while serving students exciting, flavorful meals they truly look forward to eating.
