Ingredients
 

  • 12 1/4 lb Carrots, fresh
  • 2 oz Oil, sesame
  • 2 oz Sriracha
  • 4 oz Soy sauce, low sodium
  • 2 tbsp Garlic, granulated
  • 4 tsp Lime zest
  • 2 oz Lime juice, fresh
  • as needed Scallions, (green onions), cut on bias, optional

Instructions:
 

  1. Preheat the oven to 400 °F.
  2. Wash, peel, and trim carrots.
  3. Slice carrots into ¼ inch rounds. Use a food processor, if available.
  4. Combine the oil, sriracha, soy sauce, and garlic in a bowl. Whisk to combine.
  5. Toss the carrots in the glaze mixture until evenly coated.
  6. Roast for 20 to 30 minutes until carrots are tender.
    CCP: Heat to 135 °F for 15 seconds.
  7. Remove from the oven and toss with fresh lime juice and zest.
    CCP: Hold for hot service at 135 °F or higher.
  8. Garnish with scallions, if desired.
