Seasonal Whole Wheat Breakfast Bread

- 4 cups Whole wheat flour, (550 grams)
- 4 cups All-purpose flour, (550 grams)
- 2 Tbsp Baking powder
- 2 tsp Salt, Kosher
- 1 quart Milk, skim (32 fluid ounces)
- 4 each Eggs, or 1 cup of liquid eggs
- 2 cups Honey, (340 grams)
- ½ cup Oil, canola or vegetable (4 fluid ounces)
- Non-stick cooking spray, As needed for pans
- Seasonal fruit or vegetable mix-in of choice, see options below
Carrot Cake Breakfast Bread
- 6 cups Carrots, shredded (728 grams)
- 1 cup Raisins
- 1 tsp Cinnamon, ground
- ½ tsp Nutmeg, ground
Apple Cinnamon Bread
- 10 cups Apples (~10 medium), peeled, small dice
- 2 tsp Cinnamon, ground
Cranberry Orange Bread
- 1 cup Dried cranberries, rehydrated. Soak dried cranberries in warm water for 20-30 minutes to rehydrate, then drain water before incorporating cranberries into the mix.
- 1 tsp orange extract
Instructions:
- Preheat the oven to 350°F. Spray a full-size 2-inch hotel pan with non-stick cooking spray.
- Combine the all-purpose flour, whole wheat flour, baking powder, and salt in a large mixing bowl.
- In a separate bowl, combine the milk, eggs, honey, and oil and whisk until it becomes a cohesive mixture. Add this mixture to the flour mixture (from step 2). Use a large rubber spatula to fold by hand, or on low speed in a mixer until evenly moistened, but careful not to overmix.
- Add desired spices and mix-ins of choice (optional) and add into prepared hotel pans, evening out the top with a rubber spatula.
- Bake until golden brown, about 25-30 minutes. Cool in the pans on racks before removing from pans. Serve warm or at room temperature.
