Pineapple Salsa

Ingredients
 

  • 1 fruit Pineapple, raw, all varieties
  • 1 medium Peppers, sweet, red, raw (approx 2-3/4" long, 2-1/2 dia.)
  • 1 medium Peppers, sweet, green, raw 1 medium (approx 2-3/4" long, 2-1/2" dia.)
  • 1/2 cup Onions, raw, chopped
  • 1/4 bunch Coriander, (cilantro) leaves, raw
  • 1/4 tsp Salt, Kosher, Fine Ground, 12/3#, Monarch 169468
  • 1/4 tsp Spices, pepper, black, ground, 5#, Monarch, 207208
  • 1/2 tsp Spices, Cumin, Ground, 6/16oz, Monarch, 207822
  • 1/4 cup Lime juice, raw

Instructions:
 

  1. Remove skin and core of pineapple and cut into small dice.
  2. Cut Red and Green Peppers into small dice.
  3. Rough chop washed Cilantro into fine dice.
  4. Cut red onion into small dice.
  5. Combine all chopped vegetables and pineapple in a mixing bowl, add spices and lime juice, mix well.
  6. Serve a 2 oz portion chilled.
  7. Hold for cold service at 41°F or lower.
