Ingredients

  • 3 1/8 cup (1lb + 5oz) Red lentils, dry – see note
  • 2 qt Water, for cooking lentils
  • 2 oz Harissa Paste
  • 1 ¼ cup Olive Oil
  • 1 Tbsp + 1 tsp Garlic, granulated
  • 1 Tbsp + 2 tsp Cumin, ground
  • 1/3 cup + 2 Tbsp Lime Juice
  • 1 ¼ tsp Salt, kosher

Instructions:

  1. To cook lentils from dry: rinse lentils with cool running water in colander; no need to soak.
Steamer: place lentils and water in a steamtable pan. Cover and steam for 20 minutes. Drain any excess liquid. Cool properly.
Steam jacketed kettle or large pot: combine lentils and water. Bring to a boil, then reduce temperature to simmer. Cook covered, stirring lentils gently and occasionally for 20 to 30 minutes until tender and cooked through (When thin outer coat of lentil starts to separate, lentils are close to done). Take care to not overcook. Drain any excess liquid. Cool properly. CCP: chill to below 41 °F.
  2. Place all cooked, chilled lentils, harissa paste, garlic, cumin, and lime juice in a food processor and puree until smooth. Slowly add olive oil one tablespoon at a time until desired consistency is achieved, careful not to let it become too thin. Alternatively to food processor method, place cooled, drained lentils and remaining ingredients into a large container and puree with an immersion blender. CCP: hold cold for service, below 41 °F.
