Caribbean Inspired Chicken
Ingredients
- 10 lbs. raw to cooked (without skin) Chicken, Cut-up, 8-piece, Raw, Frozen, 40#, USDA,100098
- 1/4 cup Celery, raw, chopped
- 1/4 cup Carrots, raw, chopped
- 1/4 cup Onions, raw, chopped
- 1/2 cup Oil, canola
- 1 tbsp Spices, garlic powder
- 1 tsp Spices, pepper, red or cayenne
- 2 tsp Spices, onion powder
- 2 tsp Spices, thyme, dried leaves
- 2 tsp Spices, parsley, dried
- 2 tsp Sugar, Granulated, 25#, Monarch, 229741
- 2 tsp Salt, Kosher, Fine Ground, 12/3#, Monarch 169468
- 1 tsp Spices, allspice, ground
- 1/2 tsp Spices, pepper, black, ground
- 1/2 tsp Spices, nutmeg, ground
- 1/4 tsp Spices, cinnamon, ground
Instructions:
- Thaw chicken overnight in the refrigerator in a perferated container set inside a solid hotel pan to seperate juices. Cover pan, label it, and place on lowest shelf in the walk in. Chicken should be dry as possible for next step.
- Combine carrots, celery and onions in food processor with cutting blade, pulse until a fine paste is made
- Combine all spices, oil, carrot, cellery, and onion paste in mixing bowl. Mix well.
- In another large mixing bowl, toss chicken with spice mixture to evenly coat chicken pieces. Move to another hotel pan and marinate for several hours, or for best results, overnight.
- Preheat oven to 375 degrees.
- Arrange chicken skin side up on a sprayed sheetpan with large pieces on the outer edges and corners, place wings and drums in the center of the pan.
- Cook on a 375 degrees with convection until skin is crispy and the internal temperature is 165 degrees. Approximately 30 minutes.
- Serve 3oz of cooked chicken with side of Pineapple Salsa using JSI recipe.
- Hold for hot service at 140°F or higher
