Ingredients
 

  • 24 whole Pears, fresh, large (approximately 8 ounces each), (12 pounds)
  • 1 cup Water
  • 1 lb Oats, rolled
  • 1/2 lb Flour, all-purpose
  • 1/2 lb Sugar, brown
  • 1/2 tsp Salt, kosher
  • 4 tsp Cinnamon, ground
  • 10 oz Butter, unsalted
  • 2 tbsp Vanilla extract

Instructions:
 

  1. Preheat oven to 375 °F.
  2. Thoroughly wash fresh pears. Cut pears in half and using a melon baller or small disher (#70) remove the core.
  3. Place pears in a 2-inch, full-size, hotel pan, cut side up (24 halves per full-size hotel pan; 12 pear halves per ½ hotel pan). Add water (½ cup per full-size hotel pan) to the pan.
  4. Place pears in steamer and cook for 25 minutes or until they are fork tender.
  5. While pears are steaming, combine oats, flour, sugar, salt, cinnamon, butter and vanilla. Mix until crumbled and the size of peas.
  6. Remove pears from steamer and top with topping and bake an additional 20 minutes until topping is crunchy.
    CCP: Heat to 135 °F or higher for 15 seconds.
  7. May be served warm or chilled.
