Apple Wedges with Pineapple-Orange Dip

Ingredients
 

  • 25 each Apples, fresh, small (approximately 6 ¾ pounds)
  • 2 gallons Water
  • 1 tsp Salt, kosher
  • 3 qt + 1-1/2 cup Yogurt, Greek, plain, whole milk (6-3/4 pounds)
  • 2 tsp Vanilla extract
  • 20 oz Juice, pineapple
  • 4 oz Juice, orange
  • 1 tsp Zest, orange

Instructions:
 

  1. Wash apples thoroughly.
  2. Core and wedge the apples using a Sectionizer or similar tool.
  3. Combine the water and salt. Whisk until salt is dissolved into water. Fine ground salt works best. As you cut the apples, put them into the salted water bath.
  4. Drain the apples thoroughly.
  5. To make the dip:
    •Combine the yogurt, vanilla, pineapple juice, orange juice, and orange zest (do not use more zest or the dip will be bitter).
    •Serve ½ cup of apple wedges with a rounded 1/3 cup (#12 disher) of pineapple-orange dip.
  6. CCP: Hold for cold service at 41 °F or below.
