On February 4, 2026, chefs from The John C. Stalker Institute’s culinary team joined school nutrition professionals from across Massachusetts at the inaugural School Nutrition Association of Massachusetts Ignite Equipment Expo. As the first event of its kind, it focused entirely on school foodservice equipment. The expo buzzed with fresh ideas, innovative products, and forward‑thinking solutions designed to strengthen school kitchens and support the staff who power them every day.
JSI Chefs: Supporting Scratch Cooking Across Massachusetts
JSI chefs attended the expo with one central purpose: to explore innovations that can help schools expand scratch cooking and streamline kitchen operations. Their work across the Commonwealth centers on building culinary confidence, strengthening efficiencies, and helping districts grow their scratch‑made menus. Schools looking to elevate their culinary practices can explore culinary and equipment training and resources on the Culinary Programs page of the JSI website.
Making School Kitchens More Efficient

Exhibitors across the expo shared a common goal: helping school foodservice teams work smarter, not harder. Conversations focused on equipment designed to support large‑batch scratch cooking, reduce cleanup time, and simplify the everyday tasks that keep kitchens running smoothly. What stood out most was how intuitive many of these tools were. When equipment is easy to use and thoughtfully designed, it not only improves workflow but also boosts staff confidence. The expo underscored how the right tools can transform a kitchen—strengthening efficiency, improving morale, and ultimately helping teams deliver nutritious meals more consistently.
Technology That Fuels Creativity and Compliance
Technology also played a starring role at the event. Health‑e Pro, a school nutrition software platform offering USDA‑compliant, school‑tested recipes, highlighted its growing library of resources. JSI recipes were newly added to the platform. This expands access to reliable, chef‑developed recipes across Massachusetts, supporting districts in menu planning that are both creative and compliant.
Spotlight on Sustainability
Sustainability emerged as a standout theme at the expo, especially among vendors showcasing paper‑based trays, utensils, storage containers, and prep ware as alternatives to plastic. These products sparked exciting possibilities for the JSI chefs, who immediately began imagining how they could be integrated into cafeterias and featured in chef coaching sessions. With rising concerns about microplastics in heated and stored foods, the shift toward renewable materials felt both timely and meaningful. Even better—many of these paper‑based items are durable enough to be reused after commercial dishwashing, blending sustainability with practicality.
Continuing the Momentum with CECAP
Events like the Ignite Equipment Expo showcase what’s possible when expertise, innovation, and community come together. For schools eager to continue strengthening their culinary programs, the CECAP (Creating and Executing a Culinary Advancement Plan) program offers personalized support.
Through CECAP, schools work with a JSI culinary consultant to assess current operations, identify opportunities for growth, and build a tailored advancement plan. Schools can request chef‑led culinary workshops, equipment training, and knife‑skills sessions, which often support readiness for the Chef Coaching Program. It’s a powerful way to turn inspiration from events like Ignite into meaningful, sustained improvement.
